The grapes are de-stemmed, soft pressed and subsequently fermented in stainless steel vats at a controlled temperature of 26°C with the addition of selected yeasts. The maceration lasts 18/20 days.
Ageing takes place in 5 hl French barrels for 18 months, followed by at least 6 months of bottle ageing.
The bottle should be opened a couple of hours before drinking. To be served at a temperature between 16 and 18°. Vino Nobile is best enjoyed in the tulip glass.
Vino Nobile is a robust wine which is best appreciated with red meat, grills, stews and game. Excellent with Pienza pecorino cheese and all ripe cheeses, it also goes well with vegetarian dishes including eggplant or radicchio.
It is perfect with fillet steak with mushrooms.
