The grapes are destemmed, soft pressed and subsequently fermented in stainless steel vats at a controlled temperature (26°C), with the addiction of selected yeast. The maceration lasts at least 20 days.
Aged in small French barrels (5 Hl) for 18 months, 6 months in Slavonian oak barrels (30- 40 HL) and a few in stainless-steel vats, after ageing the wine is bottled and stays to refine for at least 6 months.
Bright ruby, just a little bit orange on the nail. Complex nose, austere, where it differs from the olfactory descriptors of pure Sangiovese, blackberry jam, tobacco, pepper and oriental spices. mature and elegant tannins well integrated into the fine structure.
The bottle should be opened a couple of hours before drinking. To be served at a temperature between 16° and 18°. Vino Nobile is best enjoyed in the tulip glass.
